Scope and Methodology

The SBI Market Profile on Yogurt is a guide to stimulate consumer demand in this relatively mature sector of the U.S. dairy industry. Specialists in Business Information compiled and analyzed data on U.S. shipments and production, the cost structure of refrigerated yogurt plants, food store sales, consumer demographics, refrigerated yogurt product preferences, and brand shares in order to uncover sales- and profit-oriented opportunities. In addition, SBI profiled major U.S. manufacturers and marketers to review competitor growth strategies.

U.S. production and shipments of refrigerated yogurt, frozen yogurt, and frozen yogurt mix is analyzed in Section 2. Production and shipments are compiled from U.S. Department of Commerce and U.S. Department of Agriculture surveys. Production and shipments are for all domestic manufacturers, whether plants are owned by U.S.- or foreign-based companies and whether or not plants specialize (50% or more of total facility revenues) in refrigerated or frozen yogurt products. Data is provided on a volume and dollar basis. Average prices are calculated by SBI. Pricing trends are further tracked from the Bureau of Labor Statistics Producer Price Index.

SBI compiled and analyzed data from Information Resources Inc. (IRI) in order to track retail food store sales of refrigerated yogurt, yogurt drinks, and factory-produced frozen yogurt products (Section 3). Sales are provided on a dollar and print basis. Data is also segmented by major manufacturer and brand, along with sales of private label products (Section 5).

Section 3 also provides data on the demographics of refrigerated and frozen yogurt product consumers. SBI calculated the distribution of U.S. households purchasing refrigerated and frozen yogurt products by sex, age, race, income, occupation, household size, and region, and the likelihood to purchase by these demographic markets. The analysis of target markets is calculated from data in the Spring 1998 Study of Media Markets conducted by Simmons Market Research Bureau. The market is further segmented by light, medium, and heavy users. The Spring 1998 Study of Media Markets also reviews consumer refrigerated yogurt product preferences by type of yogurt product, flavoring ingredients, and flavor (Section 4). In addition, the Spring 1998 Study provides a customer profile of the major refrigerated and frozen yogurt brands (Sections 5 and 6).

Government and private sources of industry information are supplemented with a profile of major U.S. manufacturers and marketers (Section 7). This information is provided along with new product information, brand share, and brand customer profiles in order to supply the reader with competitor intelligence. Annual reports, databases, and trade journals were searched for growth- and profit-oriented strategies.

Industry data trends are summarized in Section 1, including tables on total U.S. shipments, shipments by yogurt product sector, production trends by sector, and retail food store sales by sector. The executive summary points to the important trends uncovered in this comprehensive database.
